These Black Forest Brownie Bites are stuffed with maraschino cherries and topped with whipped cream!  Perfect for Valentine’s day!

Does January 21 feel too early to discuss Valentine’s Day?  Probably, but I’m going there anyways 😉

Valentine’s Day at our house isn’t much of a big deal…we don’t get all spiffed up and go out on a date, or exchange gifts.  Our little tradition is to cook up a nice meal, one which is a bit fancier than normal, and enjoy it together.

Last year, we worked together to cook up this Seared Duck Breast with Cherry Port Sauce.  It took a bit longer than our normal dinner routine, and Kai {4 months at the time} was surprisingly calm and happy, playing in his exersaucer while we were cooking.

But the moment we sat down to enjoy this wonderful meal, ‘waaaaaaaaaaah!!!!!’  Sure enough, we had hit the limits of the food/tiredness continuum and Kai had a complete and utter meltdown.  So I put down my fork, fed Kai, put him to bed, and eventually returned to my cold meal.

I feel like that story sums up life as a new parent.  As much as you’d like to hold on to those traditions, sometimes you have to adopt new traditions that fit a little better with your new life.  I think this year, we might order in.

And these little black forest brownie bites would make the most perfect {easy} Valentine’s desserts.

For one thing, they only take 15 minutes to prep, and 10 minutes to bake.

You can make them ahead of time.

And you get all the flavors of Black Forest Cake in one bite: chocolate, cherries and whipped cream.

Aren’t they just so cute?  I don’t know why, but bite-sized food just tastes better to me!

In order to make these black forest brownie bites, I took my favorite brownie recipe, which uses real chocolate, not cocoa powder.  The semi-sweet chocolate is melted down with the butter, and this gives the brownies the ultimate chewy and fudgy texture.

The brownie batter is scooped into paper-lined mini muffin trays {they were too difficult to remove from the pan without liners}, and a maraschino cherry is pressed into the center of the brownies.  Make sure you drain your cherries for a few minutes while you prep the batter, as they add a bit of moisture to the brownies.  I added an extra tablespoon of flour to counteract this moisture.

Bake up for 10 or so minutes, allow to cool, top with a generous amount of whipping cream and there you go!

Bite-sized brownies are stuffed with maraschino cherries and topped with whipping cream in this Valentine's-worthy dessert.

Ingredients
  • ¼ cup butter {56g}
  • 3 oz semi sweet chocolate, coarsely chopped
  • ¼ packed brown sugar {55g}
  • ¼ granulated sugar {50g}
  • 1 large egg
  • ½ tsp vanilla extract
  • ¼ cup + 1 tbsp all purpose flour {39g}
  • 18 maraschino cherries, drained thoroughly
  • whipping cream to top
Instructions
  1. Pre-heat oven to 350°F. Line a mini muffin pan with 18 paper liners. Set aside.
  2. In a small pot, combine the butter and chocolate. Melt over medium-low heat, stirring frequently until everything is melted and smooth. Pour into a medium bowl and add the sugars. Mix until no lumps remain.
  3. Allow bowl to cool slightly, and stir in the egg and vanilla. Mix until completely incorporated.
  4. Add the flour and stir until completely combined.
  5. Spoon mixture into lined mini muffin trays, filling no more than ⅔ full. Press a maraschino cherry into the middle of each brownie.
  6. Bake for 10-12 minutes, until a toothpick comes out cleanly from the side of the brownie.
  7. Allow to cool completely in the pan.
  8. To serve, top with whipping cream.
  9. Brownies will keep up to 5 days in a sealed container.
