I am looking at the calendar and suddenly feeling slight pressure to get to the mall!  I haven’t bought a single gift yet for Christmas, and we are leaving for my parents house next Friday.

Luckily, unlike past years, buying gifts this year will probably only take me one trip and an hour or so of shopping.  We have implemented a new ‘policy’ that each person draws one name and buys that one person a good gift.  This is much easier than trying to figure out what my brother wants, or what Ben needs {side note: what is it about guys?  They want something, they buy it.  Then when you ask what they want, they don’t know!?}.  I like our new Christmas gift giving rules much better!

Lucky for Kai, he isn’t on the list…we are allowed to spoil him rotten.  Just remember, family members, it has to fit in our suitcase!  Also, he will probably be way more excited about the wrapping paper!

I love magic cookie bars, or hello dolly bars, seven layer bars, whatever you want to call these things!  I love them because they are fast and easy.  So fast and easy that they are ready to go into the oven before your oven has even pre-heated.

The most complicated part of this recipe is unwrapping the caramels.  Seriously.

The base of the cookie bar is chocolate cookie crumbs, I used the Oreo ones which are already ground up and ready for you to use.  The cookie crumbs are mixed with some melted butter and pressed into a 9X13 inch pan.

Next comes a generous sprinkling of chocolate chips  Semi sweet or milk chocolate, whichever you’d prefer.  I added the caramels, some coarsely chopped hazelnuts, and then the magic: sweetened condensed milk, which I mixed with 1/3 cup of Baileys Irish Cream.

For whatever reason, I always associate Baileys with the holidays.  Santa almost always brings my mom some Baileys for Christmas, and she is nice enough to share a taster with everyone.

Adding the Baileys to the sweetened condensed milk gave these bars a slight hazelnutty/caramel flavor, and gave them the ultimate chewy texture.

The bars bake up in 25 minutes, then I sprinkled them with a bit of sweetened shredded coconut…it gives them a sort of ‘snowy’ look.

A few notes about these chocolate hazelnut Baileys magic cookie bars: although pictured with whole caramels, I *strongly* recommend cutting them into quarters or smaller, because as they bake the caramels become quite chewy.  Also, make sure to thoroughly spray your aluminum foil with spray oil.  These bars are very chewy and can be tricky to get out of the pan if you don’t spray it properly.

These bars would make a great Christmas gift, and I’m pretty sure that Santa would really like a plate full of these left with a big glass of milk.  And maybe a splash of Baileys 😉

These magic cookie bars are ready to go into the oven before it has even pre-heated! A chocolate cookie base is topped with soft caramels, hazelnuts, coconut, sweetened condensed milk and Baileys Irish Cream!
Recipe type: Dessert
Serves: 18
  • 2½ cups chocolate cookie crumbs {I used pre-ground Oreo crumbs}
  • ½ cup butter
  • 20 soft caramels {don't use stale or hardened caramels}, unwrapped and cut into quarters
  • 1¼ cups chocolate chips {milk chocolate or semi sweet}
  • ⅓ cup coarsely chopped hazelnuts
  • 1 can {300mL} sweetened condensed milk
  • ⅓ cup Baileys Irish Cream
  • ¼ cup sweetened shredded coconut
  1. Pre-heat oven to 350°F. Line a 9X13 inch baking pan with aluminum foil, and spray with spray oil *don't forget the sides*.
  2. In a medium sized microwavable bowl, melt the butter. Stir in the cookie crumbs until evenly moistened and spread into the 9X13 inch pan. You may press gently with a spatula to get them evenly spread.
  3. Scatter the caramels, chocolate chips and hazelnuts over the cookie crust.
  4. In a medium bowl, combine the sweetened condensed milk with the Baileys. Spread as evenly as possible over the crust.
  5. Bake for 25 minutes, bars should be lightly browned. Remove from the oven and immediately sprinkle with the coconut.
  6. Allow to cool and set for at least 2 hours before carefully cutting the bars and removing from the foil.
  7. Store at room temperature to keep caramel soft. Bars may also be frozen
