Almond Rum Saltine Cracker Toffee (15 minutes)

Some people call this saltine cracker toffee ‘Christmas Crack’ because it is that deliciously addictive!  Rum extract and sliced almonds bring this saltine toffee to a whole new level.

I need a holiday…I’m pretty sure we all need a holiday, but at this point I NEEEEED A HOLIDAAAAY.

Somewhere in between Kai getting the flu, going to the emergency room, then getting a really awful cough that nearly sent us back to the ER, and now what I can only describe as teething induced screaming and insomnia, I have still managed to make four batches of this almond rum saltine cracker toffee…that’s how easy it is to make {and thank goodness because it has helped me through a few difficult times this week!}

And yes, it totally lives up to its nickname ‘Christmas Crack’.  It is so addictive, and I am 100% guilty of reaching for just one more slice, about a hundred times.

Who’d have thought saltine crackers would make such a delicious dessert?

It is so simple: Butter and brown sugar are boiled, then poured over a layer of saltine crackers.  Baked for a few minutes, then topped with chocolate chips.  When the chocolate chips get all melty, spread them over the saltines with a spatula.  The whole saltine cracker toffee recipe takes you less than 20 minutes!

My twist on the traditional recipe: using dark brown sugar, which contains more molasses, brings a more deep and complex flavor to the toffee.  I added rum extract to compliment and enhance the toffee flavors even more.  And I also sprinkled the tops with sliced almonds, which adds a bit more crunch and makes everything look all purty.

For so little effort, you sure are rewarded with a giant amount of flavor!  It is sweet and salty, gooey and crunchy.  And totally addictive.

This saltine cracker toffee is another idea for a delicious edible gift, I plan on giving it to Kai’s caregiver tomorrow.

It would also be great for a bake sale, party, anywhere that you may need some sort of deliciously addictive dessert, but don’t have a lot of time to put in.

And guess what?  Less time spent on baking = more time spent hot-tubbing {aka: holidays!!!!!}.  At least that’s how I’ll be spending my time for the next week 😉

Recipe type: Dessert
Serves: 10-12
  • 24 saltines
  • ½ cup butter
  • ½ cup dark brown sugar {light brown works too}
  • 1 tbsp rum extract
  • 1 cup chocolate chips {I used milk chocolate but semi sweet works too}
  • 2-4 tbsp sliced almonds
  1. Pre-heat oven to 350°F. Line a 9X13 inch pan with aluminum foil and spray generously with spray oil. Arrange saltines in the pan and set aside.
  2. In a medium pot, over medium heat, melt the butter. Stir in the sugar and rum extract until dissolved. Bring to a boil and allow to boil gently for 3 full minutes. Do not stir.
  3. After 3 minutes, pour the butter/sugar mixture evenly over the saltines. You may need to spread gently using a spatula.
  4. Place in the oven and bake for 5-6 minutes.
  5. Remove pan from oven and scatter chocolate chips evenly. Allow to sit for five full minutes.
  6. Using a spatula, spread the melted chocolate chips into an even layer.
  7. Sprinkle the almonds over top.
  8. Allow to cool completely and set {around 2 hours}, before chopping coarsely.
  9. Store in a sealed container at room temperature for up to a week.
